Put the basil, parsley, garlic, shallots, walnuts, and olives in a food processor or blender and process until finely chopped. Leave the motor running and add the oil in a slow, steady stream. Transfer to a bowl and stir in the cheese and pepper to taste. Taste and adjust the seasonings, if necessary. The sauce will keep, covered, in the refrigerator for up to two days. Bring to room temperature and stir well before serving.
